Food Storage Tip

Potatoes last the longest in a dark cool place! Store them in a cloth bag in your pantry for maximum shelf life.

Ingredients

Raspberry Dressing

  • ¼ cup lemon juice
  • 1 cup frozen raspberries
  • ¼ cup white wine vinegar
  • ¼ cup olive oil
  • 3 tbsp dijon mustard
  • 2 tbsp maple syrup
  • pinch of salt

Red Cabbage Salad

  • ½ head red cabbage
  • 1 cup edamame beans (cooked)
  • 2 pears rinsed, pits removed, diced
  • 1 small red onion (diced)
  • ½ cup feta cheese
  • salt to taste
  • ⅓ cup raspberry dressing
  • 1 bunch dill chopped

Instructions

Dressing

  1. Pour all the ingredients into a blender and blend until the dressing is smooth. Pour into a container and store it in the refrigerator.

Salad

  1. Add the sliced cabbage, edamame beans, diced pears, and diced red onions into a large salad bowl and drizzle with the raspberry dressing. Right before serving, add the feta cheese and dill.
