Ingredients
Raspberry Dressing
- ¼ cup lemon juice
- 1 cup frozen raspberries
- ¼ cup white wine vinegar
- ¼ cup olive oil
- 3 tbsp dijon mustard
- 2 tbsp maple syrup
- pinch of salt
Red Cabbage Salad
- ½ head red cabbage
- 1 cup edamame beans (cooked)
- 2 pears rinsed, pits removed, diced
- 1 small red onion (diced)
- ½ cup feta cheese
- salt to taste
- ⅓ cup raspberry dressing
- 1 bunch dill chopped
Instructions
Dressing
- Pour all the ingredients into a blender and blend until the dressing is smooth. Pour into a container and store it in the refrigerator.
Salad
- Add the sliced cabbage, edamame beans, diced pears, and diced red onions into a large salad bowl and drizzle with the raspberry dressing. Right before serving, add the feta cheese and dill.
