Easy & Tasty Zero Waste Recipe: Lychee and Lemongrass Sorbet

Why is it delicious?

Lychee sorbet is a delicate, fresh, and sweet treat. Sorbets are perfect after a big meal and have less sugar than regular ice cream. Sorbets are also easy to make in an ice cream maker or in a metal cake pan until ready to serve.

This recipe has no packaging waste, making this sorbet an all-around winner.

Food Storage Tip

Keep your lychees in the fridge! They will last twice as long as at room temperature.

Ingredients

  • 1 pound fresh lychees, peels and pith removed
  • 2 tablespoons fresh lemon juice
  • 2 cups simple syrup with lemongrass

Instructions

  1. Process lychees and 2 tablespoons water in a food processor until smooth, about 2 minutes. Transfer to a large bowl. Stir in lemon juice and syrup.
  2. Pour mixture through a fine sieve into another large bowl; discard solids. Freeze in an ice cream maker according to the manufacturer’s instructions. Transfer sorbet to an airtight container; freeze at least 4 hours or up to 1 week before serving.
