Easy & Tasty Zero Waste Recipe: Kale Pesto

Why is it delicious?
Brussels Sprouts are nutrient-dense and oftentimes looked passed when thinking of a base for a salad. Brussels sprouts are also easy to find at the farmer’s market and are usually inexpensive! With that, this salad is perfect for your next big get-together. Add some sliced nuts of your choice and top with some cranberries and homemade Dijon dressing.
Why is it Zero Food Waste?
Brussels sprouts are often sold in bulk using zero-plastic packaging. So grab a reusable tote and pick up fresh sprouts from the market to make this delicious dish.
Food storage tip
To extend the life of kale in your fridge, keep it as dry as possible by using paper towels inside a large reusable bag.
If possible, vacuum seal your pesto to preserve it for up to 9 months!
Ingredients
- 2 cups packed curly kale chopped
- 1/2 cup olive oil
- 1/2 cup of pepitas
- 1/4 cup grated Parmesan cheese
- 2 tablespoons lemon juice
- 1/4 teaspoon sea salt & ground pepper
Instructions
- In a food processor, pulse the pipits and garlic until the pipits are ground up. Add the cheese, salt and pepper, and pulse again.
- Add the kale and lemon juice. With the food processor running, drizzle in the olive oil, and process until combined.
- Season to taste and enjoy!
